This month's recipe:

Seviche [seh-VEE-chee] is a dish traditionally made of fresh, raw fish marinated in citrus juice (usually lime).  The action of the acid in the juice "cooks" the fish, firming the flesh and turning it opaque.  In this Shrimp Seviche recipe, we toss precooked shrimp with crunchy vegatables in a marinade that gets its zing from fresh lime and orange juice and some heat from chipotle peppers.  Watch Nina serve it up fresh.
