Under the direction of Executive Chef Fred Bennett, Sodexo/MUSC graduated ten (10) students  from the Culinary Foundation. Each student is required to complete eleven (11) modules that include: Sautéing Roasting Steaming Stir frying Braising Cold food prep Baking Grilling Recipe Compliance Knife Handling Pizza The students receive a certificate and medal for each module completed. The classes began in October and graduation was held in December. Completion of the program provides food preparers with the knowledge and skills needed to grow their careers through the Culinary Foundation. The Culinary Foundation training program is made possible through the support of Sodexo and the leadership skills of Executive Chef Bennett. To become a certified trainer for the Culinary Foundations, Chef Bennett completed the Culinary Institute of America (CIA) training program in New York. Even though Chef Bennett's culinary skills are reflected in his daily food preparation, he was recognized with the American Culinary Federation (ACF) Silver medal during the recipe competition at the Sodexo Regional (Area 326) in November. Judging was performed by two master chefs and was based on sanitation, organization, cooking techniques, proper utilization of ingredients and work flow.
