Grilled Hamburgers with Vegetables & Feta

Serves 6

The vegetables are built right into this hamburger, with a flavor boost from the feta cheese.

Ingredients

Vegetable oil spray
1 pound lean ground beef
2 cups shredded broccoli (broccoli slaw)
1 medium Portobello mushroom, stem discarded, finely chopped
¼ cup fat-free feta cheese, rinsed and drained
½ teaspoon lemon pepper

6 whole wheat hamburger buns

Instructions

Lightly spray the grill rack with vegetable oil spray. Preheat the grill on medium high.

In a medium bowl, combine the hamburger ingredients. Using your hands, shape into six patties.

Grill the hamburgers for 4 to 5 minutes on each side, or until no longer pink in the center (internal temperature should be 160 degrees F.)

To serve, place a patty on each bun.

Cook's Tip

Rather than the same old ketchup and mustard, try these topping ideas:  Dijon mustard flavored with horseradish, fruit chutney, baby spinach, red onions, or sliced cooked beets (a popular topping in Australia—it's really good mate!)
